  • 1 tbsp tomato paste
  • 1 tbsp red pepper paste
  • 1 tbsp garlic powder, onion powder, paprika, black pepper, salt
  • 1/2 tbsp turmeric, cumin, 7 spice, cinnamon, cayenne pepper

Soup

  • 2 cloves garlic
  • 1 tbsp adobo pepper
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 tbsp red pepper paste
  • 1 cup cauliflower
  • 1 large slice eggplant
  • 1 large peeled russet potato
  • 1 cup butternut squash
  • 1.5 cups marinara sauce
  • Splash of red wine
  • 2 cups water or chicken broth (enough to cover vegetables)
  • 1 tbsp garlic powder, onion powder, paprika, black pepper, salt
  • 1/2 tbsp turmeric, cayenne pepper
  • 2 tbsp chicken bouillon
  • 2 tbsp rice vinegar
  • 2 bay leaves

How to Make Meatball Soup

Step 1: Prepare the Meatball Mixture

In a food processor, add parsley, onion, tomato paste, red pepper paste, olive oil, and all meatball seasonings.

Blend until combined into a flavorful mixture.

  1. Meatball

  2. In a food processor add in parsley, onion, tomato and pepper paste along with the seasonings and olive oil
  3. Add ground beef to a bowl and add mixture from food processor
  4. Mix ground beef with hand
  5. Roll into meat balls and add to sheet pan
  6. Bake in oven at 375F for 20-25 minutes just until they are golden brown on the outside
  1. Soup

  2. Dice up adobo pepper and remove seeds (you can keep them if you prefer it spicy)
  3. Cube cauliflower into florets
  4. Cube eggplant, potato and butternut squash
  5. In a pot saute olive oil, tomato paste and paper paste in pot and add in minced garlic
  6. Add in veggies and seasonings
  7. Slightly cook the veggies and stir so that the seasonings coat the veggies
  8. Deglaze pot with red wine
  9. Add in Mariana sauce and chicken stock to cover the veggies
  10. Add in rice vinegar and bay leaves
  11. Bring to a boil then lower to a simmer and cover with lid
  12. Once veggies are fully cooked add in the meatballs and let cook for 5 minutes
  13. Serve with rice and enjoy!
