  3. Let sit for 10 mins

Chicken

  1. Slice chicken into cubes
  2. Season chicken with seasonings listed above and olive oil
  3. Mix in 1 tbsp of saffron water
  4. Cook chicken over the stove
  5. Once chicken is fully cooked cook sliced onions in same pot until carmelized

Rice

  1. Cook rinsed and soaked rice in boiling water just until tender to parboil not cook all the way through
  2. Drain & rinse the rice then fold with the yogurt, egg and seasonings and saffron water
  3. Oil a baking pan (preferably glass so that you can see the bottom of the rice get crispy) with ghee then add half the rice, then add the chicken & grilled onions & put the remaining rice
  4. Cover tightly with aluminum foil
  5. Bake in oven at 375F for 1-1.5 hours until bottom is crispy
  6. Once out for the oven let cool for 5-10 mins before flipping over large plate and sprinkling on cooked pistachios and slice almonds
