If you love cozy, homemade cookies with dates and nuts, but want something a little lighter and more nourishing, these healthier date cookies are for you. They’re soft, sweet, and made with ingredients that give you that comforting cookie experience—without feeling overly heavy afterward.
This recipe is especially close to my heart because my dad loves dates! I come from a Middle Eastern household, so we always have dates and nuts in our pantry and on our minds. I wanted to create something just for him—something that brings these flavors together, and that still resembles a real cookie.
And yes… they still taste like actual cookies.

They’re perfect as a snack, pre-workout bite, or a sweet treat after dinner.
Dates are naturally sweet and rich in fiber, potassium, and antioxidants. They add chewiness and caramel-like flavor without relying heavily on refined sugar. I use the noor dates instead of the medjool dates to keep the calories low.
Pumpkin puree adds moisture, natural sweetness, and nutrients like vitamin A and fiber. It helps reduce the amount of butter needed while keeping the cookies soft.
Almond flour adds healthy fats, protein, and a subtle nutty flavor. It also contributes to a softer cookie texture.
Oat flour provides fiber and heart-healthy benefits while keeping the cookies light and tender.
Flaxseed adds fiber and omega-3s and helps bind the cookies together similar to an egg. It’s an easy nutrition boost that doesn’t affect flavor.
These add crunch, healthy fats, and a little protein, making the cookies more satisfying and nutrient-dense.
Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper.
In a bowl, sift and whisk together all dry ingredients.
In a separate bowl, whisk butter, pumpkin puree, egg, flax mixture, sugars, agave, and vanilla until smooth.
Add dry ingredients to wet ingredients and mix until just combined.
Gently fold in chopped dates, chocolate chips, almonds, and pistachios.
Scoop dough onto the baking tray and bake for 10–13 minutes, until edges are set but centers are still soft.
Let cookies cool slightly before enjoying warm, or store for later.
